The Mediterranean Glow Salad

GREENS
2 cups mixed greens (such as spinach, arugula, and kale)
1 cup chopped romaine lettuce

VEGGIES
1/2 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1/4 cup Kalamata olives, pitted and halved
1/4 cup artichoke hearts, chopped
1/2 avocado, sliced

FIBER & PROTEIN
1/2 cup cooked quinoa (optional, for added heartiness)
1/2 cup canned chickpeas, rinsed and drained
1/4 cup walnuts or almonds, chopped
2 tablespoons ground flaxseeds or chia seeds

HEALTHY FATS
1/4 cup crumbled feta cheese (optional for dairy)
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
Salt and pepper to taste
1 teaspoon dried oregano

DIRECTIONS
1. Prepare the base: In a large salad bowl, combine the mixed greens and romaine lettuce as the base of your salad.
2. Add the veggies: Layer the cherry tomatoes, cucumber, red onion, Kalamata olives, artichoke hearts, and avocado on top of the greens.
3. Boost with fiber & protein: Add the cooked quinoa, chickpeas, and chopped nuts to the salad for added fiber and protein.
4. Sprinkle with seeds: For extra omega-3s and fiber, sprinkle the ground flaxseeds or chia seeds over the salad.
5. Add the healthy fats: If using, crumble the feta cheese on top.
6. Dress it up: In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, salt, pepper, and dried oregano. Pour the dressing over the salad and toss everything together until evenly coated.
7. Serve & enjoy: Serve immediately or refrigerate for up to a few hours before serving.

OPTIONAL PROTEIN ADDITIONS
Grilled Chicken: Add 4-6 ounces of grilled chicken breast, sliced thinly, for lean protein.
Grilled Salmon: Top the salad with a 4-ounce fillet of grilled salmon for extra omega-3 fatty acids.
Shrimp: Add 4-6 grilled or sautéed shrimp to the salad for a delicious seafood option.
Tuna: Mix in a can of tuna (preferably packed in water) for a quick and easy protein boost.
