Peanut Butter & Almond Butter Coffee Energy Balls

INGREDIENTS
1 1/2 cup organic pitted medjool dates, chopped
1/4 cup all natural peanut butter (plus)
1/4 cup all natural almond butter
1/4 cup water, as needed
1-2 tsp instant coffee (optional)
1 cup high protein rolled oats (Bob's Red Mill)
1/2 cup almond flour
Pinch of salt (if desired)
1/2 cup "No Added Sugar" mini chocolate chips
Organic unsweetened flake coconut

** You can use 1/4 cup peanut butter plus 1/4 cup almond butter, or 1/2 cup peanut butter or 1/2 cup almond butter (you choose).  Choose nut butters with no added sugar and no added salt.

DIRECTIONS
1. Combine dates, peanut butter/almond butter and 1/2 the water in a food processor until the dates are broken down and look like a paste; add additional water as needed to blend;
2. Add instant coffee, rolled oats, almond flour, and salt and blend until combined;
3. Add in chocolate chips;
4. Use a small cookie scoop or roll into balls;
5. Sprinkle with coconut flakes;
6. Allow to set for 1-2 hours in the refrigerator; store in a glass container in the refrigerator. 

** Makes approximately 20 energy balls
