Phil's 30 Day REBOOT One Pan Chicken Fajitas
Happy Cinco De Mayo! Here's a healthy (and guilt-free) recipe for chicken fajitas to help you celebrate!
INGREDIENTS
2 lbs of boneless chicken thighs (you can also use chicken tenderloins)
1 medium red pepper
1 medium orange pepper
1 medium yellow pepper
1/2 medium onion or 1-2 shallots
1/4 cup olive or avocado oil
3 Tbsp of taco seasoning
Salt and Pepper to taste
DIRECTIONS
1. Preheat Oven to 400 Degrees
2. Slice the chicken into thin strips. Slice peppers and onion (or shallots) into thin strips. Spread out chicken and peppers on a non-stick baking sheet. (you can add other veggies here as well if you choose)
3. Drizzle with oil and sprinkle with taco seasoning; coat well.
4. Bake for 20-25 minutes, or until chicken is cooked through. Season with salt and pepper to taste.

TACO SEASONING: Many store bought taco seasonings are full of sugar!

HOMEMADE TACO SEASONING
2 Tbsp chili powder
2 Tsps ground cumin
1-2 Tsp garlic powder
1/2 Tsp onion powder
1 Tsp dried oregano
1/2 Tsp paprika (smoked if you prefer)
1/4-1/2 Tsp cayenne pepper
Mix and store in a small glass jar.
TIPS
Buy the best quality ingredients your pocket can afford. Organic and pastured chicken is preferable, as are the remaining ingredients.
